Salsa Chicken

5 pounds frozen chicken breast
1 (16 ounce) jar medium salsa
Rice or noodles, for serving (optional)

Arrange the chicken in a crockpot. Pour the salsa over chicken. Cover, and cook on LOW for 6 to 8 hours or on HIGH for 5 to 6 hours.

Prepare rice or noodles; serve chicken over rice or noodles.

4 skinless, boneless chicken breast halves (I used
    chicken tenders – 3 tenders and 3 points per serving)
4 teaspoons taco seasoning mix
1 cup salsa (hot or mild, to your taste)
1 cup shredded Cheddar cheese (I use Kraft 2% low fat)
Light sour cream for garnish (optional)

Preheat oven to 375 degrees F.

Place chicken breasts in 9 x 13-inch baking dish. Sprinkle taco seasoning on both sides of chicken. Pour the salsa all over the breasts. Bake at 375 degrees F about 25 – 30 minutes or until chicken is tender and juicy and juices run clear.

Sprinkle the cheese on the breasts evenly and bake another 5 minutes or so until melted and bubbly.

Serve with fat free sour cream as a garnish if desired.

4 boneless, skinless chicken breast halves
1 envelope taco seasoning mix
1 cup salsa
2 tablespoons cornstarch
1/4 cup light sour cream

Spray crockpot with cooking spray. Add the chicken breasts. Sprinkle with taco seasoning.
Top with salsa. Cook on LOW for 6 to 8 hours.

When ready to serve, remove the chicken from the pot. Place cornstarch in a small amount of water and stir well. Stir the cornstarch mixture into salsa sauce. Stir in sour cream.

Serve with hot, cooked rice.

Preheat oven to 375 degrees F (190 degrees C).

Place chicken breasts in a lightly greased 9 x 13 inch baking dish. Sprinkle taco seasoning on both sides of chicken breasts, and pour salsa over all. Bake, uncovered, for 25 to 35 minutes, or until chicken is tender and juicy and its juices run clear.

Sprinkle chicken evenly with cheese, and continue baking for an additional 3 to 5 minutes, or until cheese is melted and bubbly.

Top with sour cream if desired, and serve.

4 boneless, skinless chicken breast halves
1 jar salsa

Wrap each piece of chicken in a foil "envelope." Pour salsa over chicken and seal foil tightly. Place over fire and cook for 40 minutes.

If you don’t have a grill over the fire, place on a rock near the fire, but not directly in the flames and cook for the same amount of time, turning every 10 to 15 minutes.
